What's for dinner, January 4
We are having baked salmon for dinner tonight.  The way I like to do it is season with Johnny's seasoning salt, layer of sliced onions and a layer of slices of bacon.  My dd has a recipe for teriyaki glazed salmon but forgot to get it from her.  It's the only way the granddaughter's will eat salmon.

I made chicken noodle soup for my FIL (he started chemo treatment today for lung cancer) and it was so good!  I wanted to make more but I'm missing an ingredient. 

I'm heating up a turkey breast, rolls, cajun black eyed peas, turkey gravy, mashed taters for the fam.
 Recipe: Under the Weather Easy Chicken and Noodles©From the Kitchen of Deep South Dish
Prep time: 10 min
Cook time: 15 min Yield: About 4 servings

Ingredients
  • 4 cups chicken stock or broth
  • 1 teaspoon chicken base (like Better Than Bouillon) {affil link}, optional
  • 1 can cream of chicken soup
  • 1/4 cup finely chopped onion
  • 1/2 teaspoon kosher salt, or to taste
  • Freshly cracked black pepper, to taste
  • 1/2 teaspoon dried thyme, crushed
  • 1/2 teaspoon dried rosemary, crushed
  • 1 bay leaf
  • 1 cup broken thin spaghetti or egg noodles
  • 2 cups shredded or chopped cooked chicken
  • 1/2 to 1 soup can milk or cream, only as needed
Instructions

Heat chicken broth, whisk in the chicken base and cream soup. Add everything else, except for the chicken and milk, bring to a boil, reduce heat to medium and simmer for about 10-15 minutes, or until reduced and thickened, stirring occasionally. Add the chicken and enough milk or cream, as needed, to reach desired consistency; simmer an additional 5 minutes. Remove and discard bay leaf before serving.

Bacon Ranch Chicken Noodles: Sprinkle in a packet of dry Ranch dressing and seasoning mix, along with four slices of bacon, cooked crisp and crumbled, with the chicken.

leftovers... meatloaf and mashed potatoes.   I always try to plan simple on the first day back to work after such a long vacation.

Same here! I made extra yesterday so we had leftovers today. I'm too tired to cook.

we had a super busy evening.....DH had a big salad...........i had a quick bowl of cereal before bed and i have no idea what DD had..........lol
