Homemade Tzatziki Dip
Well, Carrie's post on the Greek Turkey Burger recipe I posted about adding some tzatziki sauce to them got me searching for recipes.  I found many for tzatziki sauce...easy peasy.  I also found this one for a dip for pita chips and it is yummy!

1  10" cucumber (seeded and finely chopped...I left skin on)
3 sprigs fresh, flat leaf parsley (I'm sure dried would work also, about 1 Tbsp.)
1 small bunch of fresh mint (has to be fresh...don't know if you have planted mint, but it grows like wild...I plant it in a pot for my deck, because it also deters flies and mosquitoes!)
1/2 cup plain Greek yogurt (I used almost a cup...like my dip to be saucy. ;) )
juice from 1/2 lemon (I used the whole one since I doubled the yogurt)
a pinch of hot paprika (I like spice, so I put in 1/2 tsp.)

After seeding and chopping the cucumber, salt it "generously" and let it marinate at room temp for 15 minutes.  Remove stems and chop the parsley and mint finely. Rinse cucumber in a colander and drain.  In a large bowl, mix all the ingredients together, squeezing the juice out of the lemon and stirring it in to the mix.  Put in the refrigerate so ingredients can meld for at least an hour.  Serve with pita chips, crackers, or baguette.

YUMMMMMMMMMMMMMMMMM  pretty much the same recipe that i use except mine also has some dill and coarse ground black pepper in it!

I added some coarse ground black pepper to mine, too! lol  Dill would probably also be nice. :)

There is a potluck at work tomorrow.  Since these results are as good as verified, I am going to be brave and make it to bring in.  We always have the same things, and this would be a welcome change, I believe.

I add dill and/or cumin.

Another tip is to make sure you squeeze out all the liquid out of the cucumbers to keep the tzaziki from getting watery. I usually grate my cukes and squish them then wrap in paper towels and press to get water out.

Oh Laura!!! This sounds DELICIOUS!!! I love tzatziki sauce and a dip would be amazing! I need to share this with my daughter because she loves it more than I do!!!!
