I decided to try one of these and it is harder than I thought! It is for a cancer silent auction this weekend for a friend of mine.
Should I fill up every space, or should I leave the 2 that are mostly blank in case the winner wants to put something in?? Any advice would be great

You did an amazing job with this. I don't think you need to fill in the other two spots. It will help give it a more personalized feel for the winner.

I love this! Fabulous job! I'd leave it as it is, but I'd put a piece of folded white cardstock (like a place card) that says "Add photos or your own treasures", and place that in the empty spot. Sometimes people need to be told what they can do to personalize something.
